This is the second carrot cake i have baked in two weeks first one was a little dry, this one was very moist so i am going for the third.I gave this one to my big sis but only ate a slice at her house. The third cake will be for my mother if it makes it to her house:)

Carrot Cake is my Favorite! Do you use a mix or make them from scratch? I bought the new Duncan Hines CC mix and hope to give it a bake this weekend. I have a really good recipe for CC I should post. Got it off the back of a Bob's Red Mill pastry flour bag. It's so moist and full of fruits/nuts that you don't even need frosting on it!

I use the box then i add real carrots,fruits,coconut,and nuts and more eggs than the box calls for so it can be more moist.I do the frosting from scratch. When you get a chance you should post your recipe i would love to try to make one from scratch.Hope you enjoy your Duncan Hines CC. Sorry i made you hungry,wish you were closer i would of given you a slice or two :)
